Smoke It Up BBQ features all-wood smoked meats. No charcoal or propane is used. Hardwoods such as cherry, hickory and pecan impart a smoky sweetness that enhances the flavor of the meats. Smoke It Up also uses dry rubs instead of sauces when cooking in order to let the flavor of the meat shine through.
As sides, Smoke It Up features home made pickles and sauces. Sweet Potato fries are hand spun on the truck just before they’re cooked. There’s nothing frozen going on.
If you can’t decide:
- The Traditional Sandwich features pulled pork that’s been wood smoked for 13 hours. It will give you an appreciation for what wood smoked BBQ is all about.
- The Beet and Sheep’s Cheese Salad is a fresh, light side salad.
- When they’re available, the ribs are melt-in-your-mouth delicious. They’re made with a paprika-based dry rub and smoked for 4 - 5 hours.
- The home made pickles are delicious, as a side, or in a take-home container.
