Talking Asian food with Mama Fu's

1. How would you describe Mama Fu's?

Mama Fu’s is fresh, bold and inspiring. There is always something new for you to try because it is a little different from your usual place. Mama Fu’s brings the legendary flavors and varied tastes of Asia home by using fresh ingredients and rich combinations of flavors and spices.

2. What makes Mama Fu's special or unique?

Mama Fu’s is unique because you can satisfy your cravings for bold dishes with the best Chinese, Japanese, Thai, Korean and Vietnamese flavors all in one place, every day.

3. What do you mean when you say Mama Fu’s is "flex-casual"?

Flex-Casual is our service model to better fit into our customer’s daily lives. Lunch is a faster, more casual approach where you will order at the counter, while dinner is more relaxed and full service. The Flex-Casual service model allows us to focus on both lunch and dinner but in their own unique ways that cater best to our customers' daily schedules.

4. Can you tell us about the overall approach to your menu?

Mama Fu's gathers unique tastes and bold flavors from across Asia to create fresh, healthy, customized cuisine served straight from the wok. High quality, fresh ingredients are cornerstones of the menu. Guests can choose from any of the following principal ingredients: chicken, pork, steak, shrimp, veggies or tofu. All dishes are prepared to order. Want extra spice? No onions? No problem.

We are committed to providing healthy choices to our guests. We make every dish fresh-to-order, so it’s easy to customize your meal and include all your favorite fresh vegetables. Our all-white meat chicken, premium pork tenderloin, succulent shrimp, choice sirloin, and baked tofu are all low-fat, healthy protein options when you choose to have them steamed with your favorite dish.

The menu is organized into appetizers, salads and soups, black market, rice entrées, noodle entrées, street food, sides and desserts, and within that we have a kid’s menu, a vegan menu and a gluten-free menu.

5. What’s the theme to your menu? Are you offering the "classics" from each culture?

Classics familiar to the American palette are served; however, the fusion of unique flavors sets Mama Fu's apart. In April and October of each year, Mama Fu's introduces a seasonal menu showcasing new items called the Black Market Menu. The most successful of these featured dishes are transferred to Mama Fu's core menu. This ensures on-going innovation and the introduction of new recipes that are more adventurous.

6. Can you say a little more about the Black Market Menu?

The Black Market Menu is a menu exclusive to members of the Mama Fu’s loyalty program, the Funatics Club. The secret menu features innovative Asian cuisine developed by Mama Fu’s world-class chefs, selected through an internal culinary challenge.

The Black Market Menu items are replaced every six months. The 2015 Fall Black Market Menu includes items such as Pho Rice Noodle Soup, Chicken Satays, Miso Sake Sirloin and Coconut Pineapple Cake.

7. Can you tell us about the Chicken Satays?

A satay is a type of seasoned and grilled meat, served on a skewer. Our Chicken Satays are made with charred chicken thighs seasoned with Hoisin BBQ sauce, served over Asian slaw, garnished with cilantro, sesame seeds, and fresh lime.
