1. Tell us about Chocolate Charlie Confections
Chocolate Charlie Confections is a food truck in Jacksonville Florida that serves an assortment of fresh and delicious baked goods.
2. Are you mostly desserts?
I serve much more than desserts. If I have a morning event, I have many breakfast items such as banana bread, muffins, turnover pastries, crumb coffee cake, croissants, cinnamon rolls, and bagels.
3. What types of confections do you offer?
All Kinds! I have cupcakes, brownies, cookies, cake pops, individual fruit pies, oatmeal cream pies, lemon bars, fruit tarts, cannolis, tiramisu, cheesecake, key lime pie, and of course all the breakfast items I named before. I also am always trying new things and always looking for new baking challenges so new items will come out if they become family and friend approved.
4. Is there a theme or style to your offerings?
My truck is a family friendly, old fashioned bakery.
5. Do you have a special twist or approach to your food?
My baked goods aren’t super sweet. They’re more like grandma’s baking where none of it is too sugary, but all of it has great flavor.
6. What sets Chocolate Charlie Confections apart?
Breakfast service, for one thing. My truck can be out at any time throughout the day whether its breakfast, lunch, or dinner. Another thing is the large variety of baked goods to choose from. I also think I am different than most dessert trucks in Jacksonville because I actually bake right there on the truck so people can get my items as fresh as possible.
7. Do you change up your menu often or is it pretty consistent?
I have a few items I would say I consistently have, but overall I would say I change up what I bake depending on the time I go out, my location, and what I feel like will be popular for the area.
8. What are some favorites from your truck?
My personal favorite are the oatmeal cream pies because they remind me of my childhood when I use to eat the Little Debbie oatmeal cream pies. For most people that have tried my baked goods, I would say their favorite items are my raspberry turnovers or my crumb coffee cake.
I've had some great feedback for my banana pudding cupcakes, which I appreciate. In my opinion the banana pudding cake is even better than the cupcakes for anyone who may want to order a whole cake.
9. What would you recommend to a first time visitor who wants to get an idea about your style of baking?
For a first time visitor I would recommend the crumb coffee cake. I think it’s good whether you’re looking for a sweet breakfast or a tasty dessert.
My signature items I would say are my fruit filled turnovers and my crumb coffee cake. The raspberry or guava filled turnovers are usually the favorites.
10. Do you have a favorite recipe?
My yummy moist banana bread is my most meaningful recipe because it has been passed down in my family for generations. I definitely would recommend trying it especially with a cup of coffee for breakfast.
11. Any hidden gems?
I have two items I can think of that are not widely known about. First and most surprisingly are my turnovers. Those who try them usually love them and come back wanting more of their delicious flakiness, but I think most people don’t know what they are and so they don’t order them.
The second I would say is my linzer tart cookies. They’re just like the ones you would get from a New York bakery which are tasty, crispy, and not overly sweet.
12. Do you carry gluten free items?
I haven't made gluten free items on my truck so far, but I do have some gluten free recipes. My best is my super moist gluten-free chocolate cupcakes. I probably will make them at bigger events or upon request. If people are interested they can call me the day before to place an order.
13. Do you offer catering or cake ordering?
I do orders for anything. Just give me a call as to what you want, how many, when, and how I can get the items to you. As for catering, I am not presently doing it, but will probably grow into it as I get more established.
14. Where did you get the name for your truck?
When trying to come up with a name for my truck I knew I wanted something fun and with alliteration. My longtime friend Brailee and I were getting dinner when she suggested Chocolate Charlie Confections. The name Chocolate Charlie came from when I was younger and would go to New Hampshire every summer where I always hoped to see a moose. It became my favorite animal and I eventually got a stuffed animal who I named Chocolate Charlie. We thought the alliteration worked and a cute moose would be a fun, family friendly mascot.
15. Who did the artwork on your truck?
I got my truck painted by the wonderful and talented Mack Sturdivant. He is owner of Air Affects in Green Cove Springs. You can see more of his art on his website at MackAir.com.
16. Can you tell us about your background?
Before opening my food truck, I actually worked at a mortgage company. After working there for almost 2 years, I knew the corporate world was not for me and I had to get out to find something I loved to do.
I have been baking since I was probably 7 or 8 years old, starting with an Easy Bake Oven. From there things grew as I started to make things from scratch and kept looking for new baking challenges. When it comes to my baking I am a perfectionist. I am always playing around with my recipes trying to find what I can do to make them better. Most of my baking is self taught except for a few things I learned from my mom and the few tricks I picked up in the years I worked at Publix Bakery. I also have a degree in nutrition and food science where I learned some of the chemistry behind my baking and had to take food management classes (so you know you’re food is always being safely handled).
17. What appeals to you about baking?
The thing that most appeals to me about baking is watching people enjoy my finished products and their reaction to it. There is nothing better than a person coming back for seconds with a smile on their face (and maybe complaining I am ruining their diet).
18. What appealed to you about owning a food truck?
When I was working at the mortgage company I used to go out to lunch to all the different Jacksonville food trucks with my dad - and we loved them! They were always better than regular restaurants. We were willing to follow them and find them just to have some great gourmet food. So when I was trying to figure out what was next for my career I decided to add my love of baking to my love of food trucks, and here I am!
19. What do you like most about running a food truck?
I love how food trucks have freedom to move locations. If one location doesn’t work than you move on to another and people will still follow you to that better location.
